Sorry to hear about the further messes down there. Quito is a nightmare these days I hear, which is such a shame. It used to be a safe place (relatively anyway!)

How do you make your sourdough? Do you keep a starter that you feed daily?

Jalapeños can be awesome if they're spicy. But most that I encounter here aren't, really. That's sad. But the blend with rocoto might do the trick.

Quito is save, as much as any big city in Ecuador. It's important knowing the neighborhoods that are save and those that aren't, just like in any big city in the world.

I have my sourdough since the beginning, 11 years ago. We feed it almost daily, as we produce almost daily. I think it has a 48 break at most. Good stuff!
