A Country Boy Can Survive: February 2 2025
Today was a little bit rough. There wasn't anything specific that made it bad. It was just one thing after another. I was super busy and nothing seemed to be working for me. I also had a hard time staying active through it all. It made me angry all day, which isn't normal for me.
The night ended pretty well though. I smoked a pork loin (pictured above), and it turned out great. I love smoking pork loin. It's an inexpensive cut of meat. It doesn't take much preparation to smoke, and it comes out great in the smoker. It also doesn't take too long to cook. We slice it thin and put it on garlic bread for sandwiches. It's delicious. Here's a couple of pictures of the prep.
Start with the thawed loin. Then apply a liberal amount of seasoning.
Season one side, then flip it over.
Make sure you apply seasoning to the entire loin. You have to get all the sides. Then you just throw it in the smoker at anywhere from 225 to 275, your preference. Cook until it reaches 155 degrees Fahrenheit (69 degrees Celcius), which usually takes about 2 hours. It's great. It's healthy too. Low fat, low carb, high protein.
I finished the day on a nice round number, 7500 steps. It was totally by chance. I wasn't too worried about stairs or active minutes though. I was glad to just make it to 7k. I also finished the day under my calorie limit. So it was still a win.
Continuing with the theme: Each night I post the song that was playing as I ended the workout and use that as the title for the post for that day. Today, it was A Country Boy Can Survive by Hank Williams Jr. This is a good song and it was somewhat fitting for today. Smoking meat is a country-ish thing to do. The song also talks about the resiliency of country folk. We all face adversity every day and its good to build up a resiliency to it. It won't always be good. We're all going to have bad days, and we can all survive it.
Well, that's it for today. I start back to a more normal work day tomorrow, so I will really have to concentrate on my activity. So my goals for tomorrow are 5000 steps and under 1700/calories.
