Not a music DOCTOR!!!
I'm a musician... and mostly performing... but I do do (hehe...) some teaching at the local university, both ensemble and individual... sometimes to do with my specialisation of Early Music, and others as a generalist violin/viola teacher. And of course, I have some misgivings about whether or not music as a practice SHOULD belong at a university... but I think the same thing for many things, up to and including the practice (not research...) of medicine.
... but for whatever reason, having a university degree seems to be important for some reason... even if as a musician, no-one cares about the degrees that you might or might not hold... and the only thing that matters is how you play as a musician... both music and on the instrument.
To me, the university is better for research and a TAFE or trade-hall is what you need for the practice of music (and medicine...), just the same as the other trades like carpentry or plumbing.
... but I'm a bit in the minority there, people love having letters after their names.
Anyway, this sort of also irks me in the field of music... as music academic researchers do pretty good historical research and all of that.. those are hard-core researchers. But too many less good performing musicians end up getting into the academic career with frankly quite dubious research topics... up to and including Phd's and postdocs...
... and after reading quite a few of them... well, some of them are "diaries" (I forget the fancy name for that...) of "personal exploration" (NOT A RESEARCH TOPIC)... or a 100k word ramble on some question that would be best answered with a YES or NO.
Anyway... as I've started teaching at the university when I came back to Australia, it has meant that I've had to fit into the system... without a Phd, you get paid less and you don't have any chance of getting any permanence... no problem, I rather not be tied down anyway. But there is also the implied "inferiority" which does gall me more than a bit... but not enough to torture myself into doing a Phd rather than performing!
In fact, I have little respect for a Phd and in many cases, I see it as a badge of lack of musical ability... of course, a generalisation... but not a terrible heuristic!
... but for some reason, this year's batch of new students have started addressing me as "Dr..." in emails... which I get a weird reaction to. My dad was "Dr..."... in Mathematics! I am DEFINITELY NOT a doctor of anything! Just a violinist and musician.... and I LIKE IT LIKE THAT!!!!

From my experience a lot of people who go to university to study music like that end up being teachers, which I guess is a reasonable and honorable profession.
Yes, I am the only "survivor" from my graduating class of violins... the attrition is real... and nothing wrong with being teachers either, we need all of that to keep the pipeline alive!
As you say, what matters in music is how you play and many great players have little or no formal education. It may be more formal in the classical realm, but a listener will not care about your qualifications. But people will do it anyway for various reasons. I went to college to study engineering where you do need that structure. I do music for fun.

I don't know how diary or personally explorative the "personal explorations" are but that does seem to be the kind of thing unis should be geared towards as much as rehashing/being familiar with old stuff.

Yes... the TAFE/tradehall route is pretty much pooh-poohed out of existence by the classical people... sigh, that would have been the perfect fit... but apparently we need to feel like we are better by having a tertiary degree...
Youngest's teacher questioned his motivations for going to uni as he wants everything to be more accessible and less elitist so that works out for me. Youngest is 17 so sometimes he wants to be too elitist x_x he's got a bit more to grow out of it aaaahhh XD
Would have also been nice if our local TAFE had the music course but there's only one TAFE in the entire metro area that does it -_-
But we're going down the uni path because currently that's where the classical music is.
Yeah... it is a pity that Classical Music got absorbed into the uni strream of things.. really doesn't below there, and it adds to the idea that it is music that isn't supposed to be "enjoyed".
I donno the degree I did could probably have been done at TAFE as well (and looks like there's a rough equivalent in there now but not sure how good it is, all I know is Middle started it and dropped it and there were all of three students left in one of the classes before she did) and it was still fun and I still enjoyed uni quite a lot (in contrast I really hated school to the point I almost didn't want to go to uni as I was sick to death of institutional education, glad I did).
Interestingly I would have thought the opposite as TAFE seems to pride itself on the apparent ability of graduates to practically walk into a job on completion 😅 which made Eldest ditch the fitness course he was doing first up as he found it way too prescriptive.
I agree with you on both the music and medicine. My nephew just finished training in medicine and is in Sydney in A&E. He is also a sax player (maxed out on the grades) and plays live fairly regularly. Not classical though, usually jazz. He only has a plastic travel sax with him in Oz :D
